Sauteed Green Beans and Cherry Tomatoes

How to make Sauteed Green Beans and Cherry Tomatoes Recipe

4 SERVINGS

Ingredients:
4 cups Green beans, trimmed
2 tablespoons Unsalted butter
1 Shallot, minced
1 Garlic clove, minced
1 teaspoon Lemon juice
1 tablespoon Dry white wine
1 cup Cherry tomatoes, halved
1 tablespoon Tarragon, chopped
To taste Salt and black pepper

Method:
Trim the stems from the beans; cook in boiling salted water for approximately 6 to 8 minutes, until tender. Shock the beans in ice water and drain. Chill until needed.

Heat the butter; add the shallot and garlic, and cook 2 minutes. Add the lemon juice and wine, and cook 1 minute more or until almost dry.

Add the beans; season and cook 2 minutes.

Add the cherry tomatoes and tarragon. Cook 2 minutes or just long enough to heat tomatoes.

Season with salt and pepper. Serve immediately.
