Steak Fries

Ingredients:
2 each Russet potatoes
To taste Coarse salt and black pepper
As needed Vegetable oil, for deep-frying
Method:
Peel and wash the potatoes. Cut lengthwise into 8 wedges.
Parboil the potatoes in boiling salted water for 3 to 5 minutes. Drain, cool, and dry. Set aside until needed.
Fry the potatoes in a 350°F (175°C) fryer in 2 steps. First, let the potatoes get soft and form a skin. Remove them from the oil. Let the temperature of the oil recuperate. Second, shake the basket, place the potatoes back into the hot oil, and let the potatoes get golden brown and crisp.
Drain the potatoes on paper towels and season with salt and pepper.
