Glazed Carrots

Ingredients:
2 tablespoons Butter
3 cups Carrots, peeled, oblique cut
1 1/2 teaspoons Granulated sugar (optional)
1/2 cup Chicken stock
to taste Salt and black pepper
Method:
Heat a sauté pan and melt the butter. Add the carrots, sugar, chicken stock, and seasoning. Bring to a simmer and cook, covered, on low heat until the carrots are almost done.
Remove the cover and allow the liquid to reduce to a glaze. If carrots are done before glaze is formed, remove them with a slotted spoon, reduce the liquid, and return them to the pan to finish the process.
