Bacon and Avocado Bruschetta

How to make Bacon and Avocado Bruschetta Recipe - Crisp bacon and creamy avocado are complemented beautifully with a twist of lemon in this delightful Christmas brunch dish.

SERVES 4

Ingredients:
6 slices bacon, cut crosswise in half
12 slices crusty French or Italian bread, 1/4 inch thick, cut on the diagonal
1 Hass avocado, split and pitted
Slivered peel and juice of 1/2 lemon

Method:
Preheat the broiler. In a skillet, cook the bacon until nice and crisp. Drain on paper towels. Place the bread on a broiling pan and broil until lightly toasted on one side.

Flip the slices and toast on the other side. Scoop the avocado into a bowl, add lemon juice to taste, mash well, and season with salt and pepper. Spread a good tablespoon of avocado onto each toast.

Top with a piece of bacon, a few drops of lemon juice, a little lemon peel, and a twist of cracked pepper.
