Grilled Root Vegetables

How to make Grilled Root Vegetables Recipe - Beets will turn everything pink. You may want to roast them separately.

Serves 3-4

Ingredients
3 c. root vegetables (pick from: carrots, parsnips, sweet
potatoes, onions, rutabagas, beets, turnips, garlic)
2–3 Tbsp. vegetable oil
Salt and pepper
Spices to taste (cumin, thyme, rosemary)

Method:
Preheat oven to 375 degrees.

Peel and cut vegetables into one-inch chunks.

Toss in olive oil and spread on cookie sheet.

Sprinkle with salt, pepper, and spices.

Roast for 45 minutes to one hour or until soft inside and lightly browned.
