Traditional Latkes

How to make Traditional Latkes Recipe - If you wish to make these ahead, they may be reheated in hot oven on cookie sheets lined with brown paper.

Ingredients
4 medium potatoes (about 4 c.) (Russet potatoes work well)
1 tsp. vinegar
1 medium onion, diced (about ½ c.)
2 eggs
2 tsp. salt
2 Tbsp. matzah meal or flour
Oil for frying

Method:
Peel potatoes (optional). If you don’t peel them, wash them well.

Grate or shred in processor. Drain excess liquid. Sprinkle vinegar on top to keep potatoes from discoloring.

Add rest of ingredients and mix thoroughly.

Heat 1/8 inch of oil in large frying pan. Carefully place spoonfuls of batter into hot oil and fry on both sides until brown. Drain on paper towels.
