Bananas Foster Frappe
Makes 8 servings
Ingredients:
3 bananas, peeled
1⁄3 cup raw sugar (turbinado sugar)
Juice of 1⁄2 lemon
1⁄2 ounce Grand Marnier
1⁄4 teaspoon ground cinnamon
3 cups low-fat vanilla ice cream (slightly softened)
3⁄4 cup Mount Gay Eclipse rum
3⁄4 cup low-fat or fat-free half-and-half
1⁄2 teaspoon banana extract
Sliced strawberries, for garnish
Method:
Preheat the oven to 300°F. Spray a baking dish with nonstick cooking spray. Slice the bananas lengthwise and then into 1-inch chunks. Add the bananas to a mixing bowl along with the sugar, lemon juice, Grand Marnier, and cinnamon.
Toss gently. Place the banana mixture into the baking dish and cook until softened, about 10 minutes. Allow to cool thoroughly.
Add the cooled banana mixture and accumulated syrup to a blender along with the ice cream, rum, half-and-half, and banana extract. Blend until smooth. Pour into eight chilled wine goblets. Garnish with sliced strawberries.
