Cashew Chicken Salad
Ingredients:
2 1⁄2 cups shredded cooked chicken breast
1⁄2 cup finely chopped celery
1⁄2 cup mayonnaise
1⁄2 cup coarsely chopped lightly salted cashews
1⁄4 cup chopped fresh parsley
1⁄4 cup dill pickle relish
2 tablespoons minced white onion
1 tablespoon fresh lemon juice
1 tablespoon minced garlic
1⁄2 teaspoon dried thyme
1⁄2 teaspoon kosher salt
1⁄2 teaspoon freshly ground black pepper
Method:
1. Add all ingredients to a large bowl, mixing until well combined. Serve chilled or at room temperature.
