Spicy Crab Soup
4 SERVINGS
Ingredients:
2 tablespoons Unsalted butter
1/2 cup Onion, 1/2 inch (1.2 cm) dice
1/2 cup Celery, 1/2 inch (1.2 cm) dice
1 cup Potato, 1/4 inch (.6 cm) dice
2 cups Tomatoes, peeled, seeded, 1/2 inch (1.2 cm) dice
1/2 cup Corn kernels
2 cups Chicken stock
1 teaspoon Old Bay seafood seasoning
1/2 teaspoon Salt
1/4 teaspoon Black pepper
1 cup Crab meat, lump, thoroughly picked of shell
1/2 cup Green peas
1 teaspoon Lemon juice
Method:
Heat the butter over medium heat and cook onion 4 minutes.
Add the celery and cook 3 minutes.
Add the potato, tomatoes, corn, and chicken stock.
Add the seasonings and cook 25 minutes.
Add the crab meat and peas, then simmer 10 minutes.
Correct the seasoning with salt, pepper, and lemon juice. Serve with Crab Puffs
