Potatoes Parmentier

Ingredients:
3 cups Russet potatoes, peeled, 1/2 inch (1.2 cm) dice
2 tablespoons Vegetable oil
1/4 cup Unsalted butter
To taste Salt and black pepper
2 teaspoons Parsley, chopped
Method:
Heat the oil and butter.
Add the potatoes and sauté over medium heat for 10 to 12 minutes, or until an even golden color. Keep in warm oven.
When ready to serve, season with salt and pepper, and sprinkle with parsley.
