Buffalo French Fries
How to make Buffalo French Fries Recipe - These spicy and tangy fries have a puffy, crispy shell that is complemented by the blue cheese dip that also tastes great with traditional hot wings.
Ingredients:
6 fresh Russet potatoes
Peanut oil
1 cup flour
1/2 cup buttermilk
2 teaspoons Louisiana-style hot sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Sea salt
Blue Cheese Dip
Method:
Peel and cut the potatoes into 3 inch lengths about 1/2 inch square using a knife with a sharp blade.
In a deep-fryer, or heavy pot, preheat the peanut oil to 325 degrees F. Add the cut potatoes and cook about 5 minutes until soft but not browned. Remove and drain the excess oil; spread the slices on a sheet pan lined with paper towels. Set aside.
Combine the flour, buttermilk, hot sauce, salt, pepper, and spices in a bowl and mix well.
Increase the temperature of the peanut oil to 375 degrees F. Use a kitchen thermometer to verify the temperature. In small batches, approximately 2 cups each, coat the potato pieces with the batter.
Add the battered potatoes to the hot oil using cooking tongs, being careful not to overcrowd the fries. Cook for about 5 minutes until crisp and slightly brown. Using a basket remove the potatoes slices from the oil, shaking to remove any excess. Spread the potatoes on a sheet pan lined with paper towels to drain. Allow the fries to stand for 1 minute before salting with sea salt. Serve with Blue Cheese Dip.
