Aduki bean stew

SERVES 4
Ingredients:
1 tbsp olive oil
1 onion, finely chopped
sea salt and freshly ground black pepper
2 garlic cloves, finely chopped
½–1 tsp cayenne pepper (depending
on how hot you like it)
1 x 15oz (425g) can aduki beans, drained and rinsed
1 x 14oz (400g) can diced tomatoes, with juices
2 cups hot vegetable stock
about 12 black olives, such as kalamata, pitted
Method:
1 Heat the olive oil in a saucepan over low heat. Add the onion and a pinch of sea salt, and cook gently for 5 minutes until soft. Stir in the garlic and cayenne.
2 Add the beans and tomatoes, including any juices, then pour in the stock. Bring to a boil, then reduce the heat to low. Simmer for 15–20 minutes, stirring in the olives during the last 5 minutes of cooking. If the stew dries out, add a little hot water.
