Garlic Confit Jam

How to make Garlic Confit Jam Recipe

Ingredients:
1 cup (136 g) garlic cloves, peeled, from 2 to 3 heads
1 sprig fresh thyme
1 cup (235 ml) olive oil
1 cup (235 ml) vegetable oil

Method:
Preheat oven to 350°F (180°C, gas mark 4).

In a small ovenproof saucepan or Dutch oven, place the garlic, thyme, and both oils. Cover and bake for 45 minutes to 1 hour until the garlic is golden brown and tender.

Remove from the oven. When the cloves are cool enough to handle, squeeze the garlic from the skins into a bowl. Cover and reserve.

Pour any remaining oil into a  separate bowl and save to brush on burgers or steaks before grilling or use in vinaigrettes. YIELD: Scant 1/2 cup (160 g)
