Chocolate Chip Espresso Cookies

Makes About 3 Dozen Cookies

Ingredients:
1 lb (454g) butter, at room temperature
½ lb (227g) brown sugar
½ lb (227g) granulated sugar 4 eggs
1 ¼ lb (567g) flour
½ tsp baking soda
1 ounce (28g) espresso powder
1 ½ lb (680g) chocolate chips

Method:
Preheat the oven to 350°F (180°C, or gas mark 4) and grease 2 or 3 cookie sheets.

In a bowl, mix the butter and both sugars until fluffy. Add the eggs one at a time and beat to combine. Add the flour, baking soda, espresso powder and chocolate chips and mix well.

Form the mixture into 2-inch (5cm) balls and place on the greased cookie sheets. Bake for 12 to 15 minutes, until the edges become firm.
