Rich Biscuit Topping

Ingredients:
2 cups All-purpose flour, sifted
2 1/2 teaspoons Baking powder
3/4 teaspoon Salt
6 tablespoons Unsalted butter, cold, 1/2 inch (1.2 cm) dice
2/3cup Milk
Method:
Preheat the oven to 425°F (220°C).
Combine the flour, baking powder, and salt.
Mix the cold butter into the flour until the mixture looks like coarse cornmeal.
Stir in the milk and mix until it starts to form a ball.
On a lightly floured surface, knead gently for 30 seconds to shape into a ball (takes about 15 turns).
Roll or pat the dough to a 1/3-inch (.8 cm) thickness.
Cut dough to fit tops of casseroles or into diamond shapes.
Bake about 25 minutes, or until browned and heated through. (Do not immerse biscuit dough in liquid, or they will not brown well.)
