Bibb Lettuce Salad

Ingredients:
1 1/2 tablespoons Lemon juice
1 tablespoon Red wine vinegar
1 tablespoon Granulated sugar
1 teaspoon Dijon mustard
1/4 cup plus 1/2 tablespoon Olive oil
To taste Salt and black pepper
2 heads Bibb lettuce, washed, dried, torn
Method:
Combine lemon juice, vinegar, sugar, and mustard; whisk together.
Slowly whisk in 1/4 cup (2 ounces, 58 ml) olive oil.
Season and set aside.
Toss the lettuce with the vinaigrette to coat.
Remove the aspic from the molds. Serve the salad on chilled plates and top with the aspic.
