Spicy Oatmeal Cookies
Makes about 60 cookies
Ingredients:
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon ground cloves
3/4 teaspoon ground ginger
3 cups rolled oats, quick or old-fashioned
Method:
Preheat oven to 350F (175C).
In a large bowl, beat butter, brown sugar, granulated sugar and eggs until light and fluffy. Mix in remaining ingredients.
Shape dough into balls the size of walnuts; place 2 inches apart on ungreased baking sheets. With a glass dipped in water, press cookies to 1/4 inch thick. Bake 8 to 10 minutes or until golden and crisp. Cool on a rack.
