Amish Orange Salad with Poppy Seeds
Makes 2-3/4 cups
Ingredients:
3 seedless oranges, peeled, sliced
Poppy-Seed Dressing, see below
Sliced avocado (optional)
Poppy-Seed Dressing:
1 cup honey
1/4 teaspoon salt
1/2 cup cider vinegar
1-1/3 cups vegetable oil
2 teaspoons poppy seeds
Method:
Arrange orange slices on a platter or 4 individual salad plates. Prepare Poppy-Seed Dressing. Garnish salad with avocado slices, if desired. Offer dressing at the table to spoon over individual servings. Makes 4 servings. To prepare Poppy-Seed Dressing: In a jar with a lid, combine dressing ingredients; shake to blend. Refrigerate until ready to serve. Shake before serving.
