Sweet French Fry

How to make Sweet French Fry Recipe - The sweet potato or yam (the oranger, softer variety) is rich in vitamins and taste. I like to think of the sweet potato as a dessert that is part of the meal.

Ingredients:
4 large sweet potatoes or yams
1/2 cup Vanilla Sugar*
2 teaspoons cinnamon
Vegetable oil
Caramel Sauce

Method:
*Make Vanilla Sugar by storing several cups of sugar in a closed container for at least a week with a vanilla bean that has been split open. Vanilla Sugar is great for use in all types of desserts.

Cut:
Peel the sweet potatoes and cut them into lengths about 1/4 inch square using a knife with a sharp blade.

Mix:
Mix the Vanilla Sugar and cinnamon together in a small bowl.

Fry:
In a large heavy pot or deep-fryer, preheat the vegetable oil to 365 degrees F. Use a kitchen thermometer to verify the temperature. In small batches, approximately 2 cups each, add the sliced sweet potatoes to the hot oil. Cook for about 5 minutes until crisp and brown. Using a basket, remove the sweet potato fries from the oil, shaking to remove excess oil. Spread the fries on a sheet pan lined with paper towels to drain. Allow the fries to stand for 1 minute and sprinkle with the sugar and cinnamon mixture. Repeat for the remaining batches. Serve with Caramel Sauce. Serves 6
