1 recipe Essential Fries, Drive-in Fries, or Oven Fries
1 cup fresh basil leaves, packed
1/2 cup pine nuts
2 cloves garlic, minced
1/2 teaspoon salt
1/2 cup extra virgin olive oil
1 cup freshly grated Parmesan or other hard cheese
Method:
Combine basil, pine nuts, garlic, and salt in a food processor. Process until a paste forms. While pulsing the food processor, slowly pour in olive oil until combined with paste.
Make fries according to directions. Mix pesto with hot fries and toss to coat. Sprinkle with grated cheese before serving.
