Drive in French Fry

How to make Drive-in French Fry Recipe - The automobile revolutionized just about everything, including the way we eat. The drive-in and its closely related cousin the drive-thru took America’s love of the car and combined it with french fries, which are perfect for eating at the wheel. Who hasn’t reached into the bottom of the bag while driving to pull out fingerfuls of hot fries to eat?

Ingredients:
8 fresh Kennebec potatoes (Russet Burbank may be substituted)
Vegetable oil
Sea salt
Fry Sauce

Cut and Rinse:
Peel the potatoes and cut them into lengths about 1/4 inch square using a knife with a sharp blade or a fry cutter. Place the cut potatoes in a large bowl filled with cold water. Swirl the potatoes around. Drain and repeat. Spread the potatoes on a layer of paper towels and pat dry with additional paper towels.

Fry:
In a large heavy pot or deep-fryer, preheat the vegetable oil to 365 degrees F. Use a kitchen thermometer to verify the temperature. In small batches, approximately 2 cups each, add the sliced potatoes to the hot oil. Cook for about 5 minutes until crisp and slightly brown. Using a basket, remove the potato slices from the oil, shaking to remove excess oil. Spread the potatoes on a sheet pan lined with paper towels to drain. Allow the fries to stand for 1 minute before salting. Serve with Fry Sauce. Serves 6
