Peas and pancetta

Serves 4

Ingredients:
1 tbsp olive oil
1 onion, finely chopped
8oz (225g) pancetta, cut into small cubes
2 garlic cloves, finely chopped
few rosemary sprigs, leaves finely chopped
½ cup dry white wine
2 cups frozen peas
sea salt and freshly ground black pepper

Method:
1 Heat the oil in a large frying pan, add the onion, and cook over low heat for 5 minutes or until soft. Increase the heat, add the pancetta, and cook for another 5–8 minutes or until the pancetta is lightly browned. Turn down the heat, add the garlic and rosemary, and stir for a few seconds.

2 Increase the heat again, add the wine, and let bubble for 5 minutes. Stir in the peas and simmer, stirring occasionally, for 5–10 minutes. Taste and season well with sea salt and ground pepper. Serve with lamb.
