Mackerel roasted with harissa and lime

How to make Mackerel roasted with harissa and lime recipe - maquereaux grillés avec harissa et citron vert recette

Serves 4

Ingredients:
4 mackerel (or 8, if small), cleaned
3–4 tsp harissa paste (Middle eastern chile sauce)
1 1⁄2 tbsp olive oil
2 limes, quartered
2½lb (1.1kg) baby new potatoes, halved if large
handful of fresh cilantro (coriander), finely chopped

Method:
1 Preheat the oven to 400°F (200°C). Lay the mackerel in a roasting pan, then mix the harissa and half the oil together and drizzle over the fish, inside and out. Add the limes to the pan, then toss the potatoes with the remaining oil and add to the pan also.

2 Roast for 20–30 minutes or until the potatoes are cooked through—the fish will be cooked by then as well. Scatter with the cilantro and serve with a crisp green salad.
