Lemon Salsa
Serves 6
Ingredients:
2 large lemons
1 red onion, diced
1 small bunch of fresh parsley or mint, chopped
3 tbsp olive oil
salt and ground black pepper
Method:
1 Peel the lemons, removing the white pith. Chop the flesh, discarding the pips, and mix in a bowl with the remaining ingredients.
