Ingredients:
For the chile and lime dressing
2 tbsp rice wine vinegar
2 tsp soy sauce
splash of Asian sesame oil
½–1 tsp granulated sugar
2 fresh red jalapeño chile peppers, seeded and finely chopped
juice of 1–2 limes
12oz (350g) smoked trout
large handful of salad leaves
1 bunch of scallions, thinly sliced
4 radishes, thinly sliced
Ingredients:
1 To make the dressing, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and jalapeño. Taste, and add all of the lime juice if needed, or use less if the dressing is becoming too sour.
2 Divide the smoked trout among 4 plates, then toss together the salad leaves, scallions, and radishes.
