Curried devilled eggs

Serves 4
Ingredients:
6 large eggs
2 tbsp mayonnaise
1–2 tsp medium-hot curry powder
¼-½ tsp cayenne pepper, to taste
sea salt and freshly ground black pepper
Method:
1 Cook the eggs in a pan of boiling water for about 6 minutes for hardboiled. Remove from the pan and let cool, then peel away the shell.
2 Halve the eggs lengthwise, and carefully remove the yolk using a teaspoon. Put the egg yolks in a bowl, and mix together with the mayonnaise, curry powder, and cayenne. Season well with salt and pepper.
3 Now spoon the devilled egg mixture back into each egg white, dividing the mixture evenly among the halves.
4 Serve with some crispy lettuce leaves, Parma ham, and another pinch of cayenne pepper, if you wish.
