Serves 4
Ingredients:
550g (11⁄4lb) lean pork, cut into 2cm (3⁄4in) cubes
6 garlic cloves, crushed
1 tsp hot red pepper flakes
1 tsp ground fennel seeds
1 tsp paprika
juice and zest of 1 lemon
3 tbsp fresh flat-leaf parsley, finely chopped
1 tbsp dry sherry
2 tbsp olive oil
salt and freshly ground black pepper
Method:
1 If using wooden skewers, soak them in cold water for 30 minutes before using. Put all the ingredients in a mixing bowl, combine well, then leave to marinate for at least 30 minutes.
