Serves 4
Ingredients:
8 fresh sardines, cleaned, gutted, and filleted
4 tbsp olive oil
3 garlic cloves, thinly sliced
1 fresh green chile pepper, seeded and finely chopped
juice of 1 lemon
1 tsp fennel seeds, crushed
2 tbsp finely chopped flat-leaf parsley
sea salt and freshly ground black pepper
ciabatta, sliced and toasted, for serving
Method:
1 Brush the sardines with a little of the oil and cook under a medium-hot broiler for 3 minutes on each side. Remove and allow to cool.
