Ingredients:
3 large eggs, lightly beaten
1 small zucchini, coarsely grated
1 tbsp butter
½ cup crumbled soft goat cheese
sea salt and freshly ground black pepper
small handful of fresh thyme sprigs, leaves only, for garnish (optional)
Method:
1 Combine the egg and zucchini in a bowl. Season with salt and pepper.
2 Melt the butter in a small nonstick frying pan over medium-high heat until foaming, then pour in the egg mixture, swirling it around to the edges of the pan. Gently slide a knife or heatproof spatula around the edge of the pan to lift the edges of the omelet.
3 When the edges have begun to cook, scatter the goat cheese evenly over the entire surface. Continue cooking until the egg mixture in the center is almost set, but still soft. Remove from the heat, and leave for a minute or two the retained heat will continue to cook the egg.
