MLG Pollo Brine
Ingredients:
4 cups water
1/2 cup Kosher salt
1/2 cup white sugar
4 sprigs thyme
1 lemon peel
1 shallot, chopped
1 tbsp garlic, minced
Method:
In a saucepan, bring water, salt, and sugar to a boil, stirring regularly.
When all is dissolved, take saucepan off heat and let the brine cool.
Pour the rest of the ingredients into a container that has a lid.
Add the brine to the large container and mix well.
