Green Krack Sauce
Ingredients:
2 cloves garlic, peeled
1/2 cup (8 g) finely chopped cilantro leaves
2 tablespoons (28 ml) yuzu juice
2 tablespoons (28 ml) fresh lime juice
2 tablespoons (28 ml) fish sauce
3 tablespoons (60 g) agave nectar or honey
1 tablespoon (3 g) minced chives
1 teaspoon (1.2 g) red pepper flakes
Method:
With the motor running, drop the garlic through the lid of a blender and purée. Stop the motor and add the remaining ingredients. Purée until smooth. Use within a few hours. YIELD: About 1 cup (175 g)
