Suet Crust Pastry
Makes 300g/11oz pastry
300g/11oz/3 cups self-raising (self-rising) flour
½ tsp salt
150g/5oz/¾ cup shredded suet
1 Sift the flour and salt into a bowl, add the shredded suet and stir to mix.
2 Using a round-bladed knife, mix in about 175ml/6fl oz/⅔ cup cold water to make a soft dough. If it’s too dry, add more liquid.
3 Knead lightly until smooth. Use as required.
