Exotic Fruit Salsa

How to Make Exotic Fruit Salsa Recipe - preparation 15 minutes

Serves 8

2 roasted garlic cloves
1 mango, peeled, stoned and diced
1 papaya, peeled, seeded and diced
1 red onion, finely chopped
1 red or green chilli, seeded and diced
225g/8oz ripe tomatoes, chopped
1 x 200g/7oz can red kidney beans, drained and rinsed
juice of 2 limes
4 tbsp chopped fresh coriander (cilantro)

1 Crush the garlic with a fork and mix with the remaining ingredients. Cover and chill in the refrigerator for 30 minutes.
