Grated Carrot and Beetroot Salad
3 large carrots, coarsely grated
500g/1lb 2oz raw beetroot (beets), coarsely grated
3 tbsp olive oil
1 tbsp cider vinegar
finely grated zest and juice of 1 large orange
4 tbsp chopped walnuts
a small handful of fresh parsley, roughly chopped
salt and ground black pepper
1 Put the carrots and beetroot in a serving bowl.
2 Mix the oil, vinegar, orange zest and juice and some salt and pepper together in a small bowl to make a dressing.
3 Scatter the walnuts and parsley over the grated vegetables. Pour over the dressing, toss lightly and serve.
