Mango, Avocado and Shrimp Salad

How to make Mango, Avocado and Shrimp Salad Recipe - This is the quintessential Queensland salad: vibrant and tasty!

SERVES 4

Ingredients:
2 large mangos
2 avocados
12 cooked shrimp, peeled and deveined
4 thin slices lime

Method:
Peel, pit, and slice the mangos and avocados. In individual glasses, layer the mango, avocado, and shrimp, ending with a lovely fresh shrimp (tail on or off).

Drizzle the mango juice from the cutting board over each and season with salt and pepper. Chill, and when ready to serve, garnish with a slice of lime.

Optional:
A variation is to use crispy bacon as a substitute for shrimp. This is a stunning salad served in a large glass bowl, lightly seasoned and tossed. Remember it for your next Fourth of July barbecue!
