Potato and horseradish mash

How to make Potato and horseradish mash recipe - Purée de pommes de terre et raifort recette

Serves 4

Ingredients:
1 tbsp olive oil
1 tbsp butter
7 bacon slices (200g), chopped
1lb (450g) leftover boiled potatoes, cut into bite-size pieces (about 2½ cups) or 2 cups leftover mashed potatoes
1 tbsp cream-style white horseradish
8oz (225g) curly-leaf kale, cooked, chopped, and squeezed dry
sea salt and freshly ground black pepper

Method:
1 Heat the oil and butter in a large nonstick frying pan over medium heat. When the butter has melted, add the bacon. Cook, stirring occasionally, for 5–6 minutes or until golden and crispy. Stir in the potatoes and horseradish, and season well with salt and pepper.

2 Stir in the kale until well mixed. Cook for a few minutes until lightly golden and a little crispy on the bottom. Serve hot with some cooked red cabbage on the side.
