Chickpeas in olive oil and lemon

Serves 4

Ingredients:
3 tbsp olive oil
2 garlic cloves, finely sliced
14oz (400g) can chickpeas, drained and rinsed
juice of 1⁄2 lemon
zest of 1 lemon
handful of fresh flat-leaf parsley, chopped
sea salt and freshly ground black pepper
extra virgin olive oil or hot chili oil

Method:
1 Heat the oil in a frying pan, add the garlic and chickpeas, and cook for 2 minutes. Stir in the lemon juice, zest, and parsley, then cook over medium heat for and additional 2 minutes.

2 Remove from the heat and season well with salt and pepper. Serve hot or cold with a generous splash of extra virgin olive oil or chili oil.
