Buttermilk cake with quark crumble
Makes 20 slices
For the cake mix:
400 g flour
1 sachet baking powder
200 g sugar
250 ml buttermilk
100 g melted butter
3 eggs
200 g apple and sea buckthorn purée (without added sugar)
For the crumble:
100 g low-fat quark
120 g butter
250 g flour
150 g sugar
pinch of salt
Method:
Pre-heat the oven to 180 °C (Gas Mark 4). Line the deep dripping pan of the oven with baking parchment.
Mix the flour with the baking powder and sieve into a bowl. Beat with the sugar, buttermilk, melted butter and eggs to form a smooth and relatively fluid dough.
Pour the mixture into the baking tray and level the top. Spread the apple and sea buckthorn purée with a teaspoon over the dough. Knead together the ingredients for the crumble and sprinkle over the cake. Bake on the middle shelf for approx. 40 minutes.
Variation:
Instead of apple and sea buckthorn purée, you can use your favourite jam or preserves!
