Quesadilla with cheese and chiles

Makes 1

Ingredients:
½ tbsp olive oil
2 flour or corn tortillas
½ cup shredded sharp Cheddar cheese
1 mild green chile pepper, seeded and finely chopped
1–2 tsp pickled sliced green jalapeños from a jar, drained
small handful of chopped cilantro (coriander) leaves
freshly ground black pepper

Method:
1 Heat the oil in a nonstick frying pan, and cook one tortilla for 1 minute or until barely golden.

2 Scatter the cheese over the tortilla, then add the chile, jalapeños, cilantro, and a pinch of pepper.

3 Top with the other tortilla, pressing it down with the back of a spatula to sandwich the two together. Scoop up the quesadilla with a spatula, carefully turn it over, and cook the other side for another minute or until golden on the outside and the cheese is melted. Slice in half or in quarters and serve.
