Tex-Mex Latkes

How to make Tex-Mex Latkes Recipe - Hanukkah is the only Jewish holiday celebrated in two different Hebrew months. It begins on the 25th day of Kislev and continues until the 2nd day of the month of Tevet.

Serves 3-4

Ingredients
2 c. grated potatoes
2 eggs
2 tsp. lemon juice
2 Tbsp. chopped parsley or cilantro
¼ c. chopped scallions
¼ c. flour
Salt and pepper to taste
Oil for frying
½ c. grated cheese (optional)
Salsa

Method:
Mix first 7 ingredients together in a bowl.

Heat 1/8 inch of oil in large frying pan.

Carefully place spoonfuls of batter into hot oil and fry on both sides until brown.

Drain on paper towels.

Top with grated cheese (optional) and serve with salsa.
