Wendy's Spicy Chicken Sandwich
Vegetable oil for frying
1/3 cup hot pepper sauce
2/3 cup water
1 cup all-purpose flour
2½ teaspoons salt
4 teaspoons cayenne pepper
1 teaspoon coarse-ground black pepper
1 teaspoon onion powder
½ teaspoon paprika
1/8 teaspoon garlic powder
4 boneless, skinless chicken breasts
4 plain hamburger buns
8 teaspoons mayonnaise
4 tomato slices
4 lettuce leaves
Preheat oil in a deep fryer to 350°F.
Mix the pepper sauce and water in a small bowl.
In a different bowl, combine the flour, salt, cayenne pepper, black pepper, onion powder, paprika, and garlic powder.
Pound each of the chicken pieces until about 3/8" thick. Trim them if necessary to help them fit on the bun.
Coat each piece of chicken with the flour and roll it in the watered-down pepper sauce. Coat it in the flour mixture again and set it aside. Repeat for other fillets.
Fry the chicken for 10 minutes, or until they are brown and crispy. Remove to paper towels to drain.
Prepare sandwiches by grilling the hamburger buns in a hot fry pan. Spread 2 teaspoons of mayonnaise on each bun.
Build the sandwiches by adding tomato, lettuce, and chicken.
