Tennessee Tea

How to make Tennessee Tea Recipe - This basic syrup will keep for 3 to 4 weeks in the refrigerator and can be used to make
mint juleps, iced tea or punch.

Makes about 1 gallon

Ingredients:
12 lemons
4 quarts water
1 cup packed fresh mint leaves or 1/2 cup dried mint
2-1/2 cups sugar

Method:
Squeeze juice from lemons. Strain juice; set aside. Put squeezed lemons, water and mint leaves into a medium-sized non-aluminum saucepan. Heat to simmering and simmer 15 minutes; do not boil.

Strain and discard mint and lemons. Add lemon juice and sugar. Store in a jar in the refrigerator.

Variations:
Mint Juleps: Add 1 to 2 tablespoons bourbon to 1 cup syrup. Pack julep cups with crushed ice and pour in syrup mixture.

Iced Mint Tea:
Add syrup to taste to unsweetened iced tea.

Punch:
Mix syrup with strong unsweetened tea and pineapple juice to taste. Serve over ice.
