Makes about 20
1-1/2 cups stone-ground cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 small onion, grated
In a deep heavy skillet, heat fat to 375F (190C) or until a 1-inch cube of bread turns golden brown in 50 seconds. In a large bowl, combine cornmeal, flour, baking powder and salt.
In a small bowl, mix egg, milk and onion. Add to cornmeal mixture. Drop batter from a spoon into hot fat.
Fry about 1 minute or until crisp and golden. Using a slotted spoon, remove from fat and drain on paper towels. Serve hot.
