El Torito Veggie Mix
YIELDS 3½ CUPS
1 cup corn kernels
1 cup diced zucchini
½ cup diced yellow onions
½ cup diced tomatoes
½ cup diced roasted Anaheim chiles
2 teaspoons salt
½ teaspoon black pepper
2 cloves finely chopped fresh garlic
½ teaspoon fresh chopped oregano
Place all ingredients in a mixing bowl and mix well.
Saute in a skillet for 6–8 minutes until all the vegetables are cooked.
