Chipotle Steak Barbacoa
SERVES 12
Ingredients:
2 diced onions
3 tablespoons olive oil
8 minced garlic cloves
1 tablespoon taco seasoning
1½ tablespoons oregano
1 (.36-ounce) can of chipotle in adobo sauce
1 cup chicken broth
1 cup water
1 bay leaf
2 tablespoons white vinegar
3 pounds beef roast
Method:
Take everything but the roast and put it in a blender. Blend for 1–2 minutes until it is all ground up.
Add some of the sauce to the bottom of a slow cooker.
Place roast in the slow cooker pot and pour the rest of the sauce over the meat.
Slow cook for 8–10 hours.
