Serves 6
Ingredients:
12oz (350g) fresh cranberries or frozen cranberries, thawed
6 tbsp port or red wine
2/3 cup sugar
Method:
1 Put the cranberries in a heavy saucepan and add the port. Bring to a boil, cover, then simmer gently for 10–15 minutes, or until they start to soften and pop. Remove from the heat and mash with the back of a spoon to the desired consistency.
2 Stir in the sugar a little at a time, tasting as you go, until it has all dissolved and the sauce is sweet but still tart. Serve with roast turkey or chicken.
