Sweet Potato Puree

Ingredients:
4 cups Sweet potatoes (orange-flesh)
2 tablespoons Butter, unsalted
To taste Salt and black pepper
1/4 cup Heavy cream, warm
Method:
Peel the sweet potatoes and cut into 1-inch (2.5 cm) pieces.
Cover with water, bring to a boil, and cook until they are soft.
Drain well. Run through a food mill and return to a warm pan.
Combine butter, salt, pepper, and enough heavy cream to make a smooth pure´e.
