How to make Maple Nut Fudge Recipe - This delicious confection is made in New England with butternuts, but walnuts, black walnuts and pecans are good, too.
Makes 64 (1-inch) squares
Ingredients:
2 cups maple syrup
1 tablespoon light corn syrup
3/4 cup whipping cream
3/4 cup chopped nuts
Method:
Grease an 8-inch square pan. Pour maple syrup into a 2- to 3-quart saucepan.
Add corn syrup and cream; bring to a boil. Boil, stirring occasionally, to soft-ball stage (238F to 240F/115C) or until a drop of the mixture in ice water makes a soft ball which does not hold its shape.
Remove from heat and set in another pan of ice water or snow; stir until barely warm. Beat with a wooden spoon until thick and sugar crystallizes as in making fudge. Stir in chopped nuts. Pour into greased pan. Cool until firm. Cut into squares.
