How to make Peanut Butter Brittle Recipe - The addition of peanut butter to the mixture makes this a soft and chewy variation to regular crunchy peanut brittle.
Makes about 1-1/2 pounds
Ingredients:
1 cup dry-roasted peanuts
1 cup peanut butter, creamy or chunky
1-1/2 tablespoons butter
1 cup sugar
1/2 cup light corn syrup
1/4 cup hot water
1/2 teaspoon baking soda
Method:
Measure peanuts and set aside. In a small saucepan, combine peanut butter and butter.
Heat just until warm. Stir to blend; set aside. Grease a baking sheet or marble slab and have ready. In a large saucepan, combine sugar, corn syrup and hot water. Clip a candy thermometer on edge of saucepan.
Bring sugar mixture to a boil over high heat, stirring with a wooden spoon until mixture boils. Brush down sides of pan with a dampened brush while mixture boils, to prevent crystallization.
Boil to the hard-crack stage (310F, 155C) or until a drop of the mixture in ice water separates into brittle threads. Remove pan from heat and immediately add baking soda, peanut-butter mixture and reserved peanuts; blend quickly.
Pour out onto greased surface and stretch to as thin a layer as possible; it doesn't spread easily. While still warm, cut into 1-inch squares or break into pieces after it has cooled.
