How to make iced berries with white chocolate recipe
Serves 4
Total cooking time 10 minutes
Ingredients:
175 ml (6 fl oz) double cream
175 g (6 oz) white chocolate, chopped
½ teaspoon vanilla extract
500 g (1 lb) mixed frozen berries
Method:
Put the cream in a small saucepan and heat until boiling. Take off the heat and stir in the chocolate and vanilla extract and mix until melted.
Arrange the berries in chilled serving bowls, drizzle over the sauce and serve.
For white chocolate berry mousses, melt 175 g (6 oz) white chocolate in a bowl over a pan of simmering water and leave to cool a little. Beat 200 g (7 oz) cream cheese and mix in 250 ml (8 fl oz) double cream until smooth. Stir in the cooled chocolate. In a separate bowl
whisk 3 eggs with 125 g (4 oz) caster sugar until light and fluffy. Fold into the cream cheese mixture, one-third at a time.
Place a handful of mixed berries in 4 serving dishes, spoon over some of the cream mixture, followed by some more berries. Keep layering and finish with shavings of white chocolate. Total cooking time 20 minutes.
